Alongside it, simple sweet potato wedges, baked until soft with golden edges, and finished with crushed peas, dill, and lemon for freshness.<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-text-align-center\"><strong><img decoding=\"async\" src=\"https:\/\/fonts.gstatic.com\/s\/e\/notoemoji\/17.0\/1f9e0\/32.png\" alt=\"\ud83e\udde0\">\u00a0How this recipe came to life<\/strong><\/h2>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">You might be wondering how I came up with this combination.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">It\u2019s a slightly strange feeling to describe, but if you love cooking, you\u2019ll probably understand it.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Food is always on my mind. And like many people who enjoy cooking, I have this habit of opening the fridge again and again \u2014 even when I don\u2019t need anything. Just checking. Just thinking.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">And then, sometimes, (who am I lying to, most of the time, if not all the time) inspiration just comes.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">I look at what\u2019s available, and I start building something in my head. Flavours, textures, balance.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">You might ask \u2014&nbsp;<em>how do you know it will work?<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">The truth is: <strong>I don\u2019t.<\/strong><\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">But that\u2019s the beauty of cooking.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Over time, you learn your own taste. You begin to trust what works for you \u2014 what balances well, what needs more depth, what lifts a dish. And from that instinct, something starts to form.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">That\u2019s exactly how this dish was created.<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-text-align-center\"><strong><img decoding=\"async\" src=\"https:\/\/fonts.gstatic.com\/s\/e\/notoemoji\/17.0\/1f6d2\/32.png\" alt=\"\ud83d\uded2\">\u00a0What you\u2019ll need (for two people)<\/strong><\/h2>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Before we start \u2014 have a look in your fridge. Use what you have. Adjust if you need to.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading has-text-align-center\"><img decoding=\"async\" alt=\"\ud83e\udd69\" src=\"https:\/\/fonts.gstatic.com\/s\/e\/notoemoji\/17.0\/1f969\/32.png\">&nbsp;For the coconut chicken kofta:<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 chicken breasts (finely chopped) about 300g <\/li>\n\n\n\n<li>\u00bd onion (finely diced)<\/li>\n\n\n\n<li>1 garlic clove<\/li>\n\n\n\n<li>2\u20133 tbsp coconut milk<\/li>\n\n\n\n<li>Sweet paprika (don\u2019t be shy \u2014 add a bit more for flavour)<\/li>\n\n\n\n<li>A pinch of mild chilli (just warmth, not heat)<\/li>\n\n\n\n<li>Salt (adjust to your liking)<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading has-text-align-center\"><img decoding=\"async\" alt=\"\ud83c\udf60\" src=\"https:\/\/fonts.gstatic.com\/s\/e\/notoemoji\/17.0\/1f360\/32.png\">&nbsp;For the sweet potato wedges:<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Sweet potatoes 450g<\/li>\n\n\n\n<li>Olive oil 2tps<\/li>\n\n\n\n<li>Salt<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading has-text-align-center\"><img decoding=\"async\" alt=\"\ud83c\udf3f\" src=\"https:\/\/fonts.gstatic.com\/s\/e\/notoemoji\/17.0\/1f33f\/32.png\">&nbsp;For the crushed peas:<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Frozen peas 150g<\/li>\n\n\n\n<li>Fresh dill &#8211; 2 tbsp finely chopped <\/li>\n\n\n\n<li>Lemon &#8211; small squeeze <\/li>\n\n\n\n<li>Olive oil 1,5 tsp<\/li>\n\n\n\n<li>Salt<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading has-text-align-center\"><img decoding=\"async\" alt=\"\ud83e\udd65\" src=\"https:\/\/fonts.gstatic.com\/s\/e\/notoemoji\/17.0\/1f965\/32.png\">&nbsp;For the coconut glaze:<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Coconut milk 120ml<\/li>\n\n\n\n<li>A small drizzle of honey &#8211; approximately 1\/2 tsp<\/li>\n\n\n\n<li>A pinch of salt<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading has-text-align-center\"><strong><img decoding=\"async\" src=\"https:\/\/fonts.gstatic.com\/s\/e\/notoemoji\/17.0\/1f468_200d_1f373\/32.png\" alt=\"\ud83d\udc68\u200d\ud83c\udf73\">\u00a0Let\u2019s cook this together<\/strong><\/h2>\n\n\n\n<h3 class=\"wp-block-heading has-text-align-center\"><strong>Step 1 &#8211;\u00a0Start with the sweet potatoes<\/strong><\/h3>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Let me ask you something first:<br><em>Do you want them soft or slightly crispy?<\/em><\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">We\u2019re going for&nbsp;<strong>crispy edges and soft inside<\/strong>.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Cut your sweet potatoes into wedges \u2014 not too thin. Give them some structure.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Toss them in olive oil and salt.<br>Spread them on a tray \u2014 don\u2019t overcrowd them.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Into the oven at\u00a0<strong>200\u00b0C<\/strong><br>Then leave them. Let them do their thing.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading has-text-align-center\"><strong>Step 2 &#8211;\u00a0Prepare the coconut chicken kofta<\/strong><\/h3>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Take your chicken and chop it finely. Not a paste \u2014 keep texture.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\"><strong>Add:<\/strong><\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">onion<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">garlic<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">coconut milk<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">paprika<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">mild chilli<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">salt<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Mix gently \u2014 don\u2019t overwork it.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Shape into small logs.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">\u00a0Can you already imagine how they\u2019ll sit on the plate? That\u2019s cooking with intention.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Place them on a tray, lightly brush with oil, and into the oven.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading has-text-align-center\"><strong>Step 3 &#8211; Make the coconut glaze<\/strong><\/h3>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\"><strong>In a small pan:<\/strong><\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">add coconut milk<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">a bit of honey<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Let it simmer gently.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Nothing rushed here.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\"><strong>Taste it:<\/strong><\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">too heavy? add lemon<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">too flat? a pinch more salt<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">You\u2019re aiming for something soft, balanced, and slightly sweet.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading has-text-align-center\"><strong>Step 4 &#8211; Prepare the pea, dill &amp; lemon crush<\/strong><\/h3>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Boil peas briefly \u2014 just a few minutes.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Drain well.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Mash lightly with:<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">olive oil<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">salt<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Then add fresh dill and lemon.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Smell it (Don&#8217;t be shy! You know you want it!) \u2014 this is where freshness comes in. <\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading has-text-align-center\"><strong>Step 5 &#8211; Finish the kofta<\/strong><\/h3>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Take them out of the oven, brush with the coconut glaze, and return for a few minutes.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">This is when they transform \u2014 glossy, rich, and full of flavour.<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-text-align-center\"><strong><img decoding=\"async\" src=\"https:\/\/fonts.gstatic.com\/s\/e\/notoemoji\/17.0\/1f37d_fe0f\/32.png\" alt=\"\ud83c\udf7d\ufe0f\">\u00a0Bring it all together<\/strong><\/h2>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Now take your time here.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Start with the crushed peas.<br>Add your sweet potato wedges.<br>Place the kofta with intention.<br>Finish with a light drizzle of glaze.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\"><strong>Ask yourself:<\/strong><\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Does it look balanced?<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Do the colours work together?<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Would this excite you if you saw it in a restaurant?<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-text-align-center\"><strong><img decoding=\"async\" src=\"https:\/\/fonts.gstatic.com\/s\/e\/notoemoji\/17.0\/2728\/32.png\" alt=\"\u2728\">\u00a0Final thought<\/strong><\/h2>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">And this, my friend, is a beautiful, colourful, and delicious coconut chicken kofta plate.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">The sweetness from the coconut and honey sits gently in the background, letting the kofta lead the way. The sweet potatoes bring warmth, while the peas add freshness and balance.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">I truly hope you enjoy it.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">But more importantly \u2014 make it your own.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Add a bit more salt if needed.<br>Add more paprika, like I did.<br>Maybe a little more chilli for warmth.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Don\u2019t be afraid to bring something of yourself into the dish.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Because cooking should never feel rigid.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">It should move with you.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">And sometimes, those random ideas in front of the fridge turn into something unexpectedly beautiful.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\">Oh, by the way, please don&#8217;t be shy\u2014let me know what you thought of it!
